Carmen is the newest edition to the SWA team! She grew up in Santo Domingo on the Western Slope of the Andes, but now lives in Borja. Carmen learned to cook from her mother and sisters and developed a passion for it at a young age. Since then, she has worked in many restaurants where she gained both more experience and a fascination for cooking. Carmen says, “Anything that is cooked with love is totally worth it!” After a long day of kayaking, you can expect to enjoy an Ecuadorian soup to start–quinoa, lentil, or potato, just to name a few –followed by one of many special main meals such as chicken in mustard sauce with sweet plantains on the side! If you have a special diet, no problem! Carmen can accommodate any dietary needs. Come paddle with SWA and sample the incredible Ecuadorian food for yourself. In her free time, Carmen loves to read, write, and volunteer to help others who are in need. She’s even enjoyed rafting on the Jatunyacu, Jondachi, Hollin, and Quijos Rivers!
